This pumpkin oatmeal bread is the epitome of fall goodness!

Fall is finally showing itself here in North Carolina. The mornings are downright frigid, which is definitely cramping my morning workout routine. But what’s better on a cold morning than a hot cup of coffee and a slice of pumpkin bread??
I came across this recipe on Pinterest and knew I had try it. With whole wheat flour and oatmeal, it’s a touch more healthy than your average bakery delicacy but with all the richness that you want in pumpkin bread. Even better: it’s so easy to make. Essentially just mix, bake and enjoy!
Get the pumpkin, eggs, oil, applesauce, and water together.
Pumpkin always looks a little gross in the beginning. Mix well.
In a separate bowl, combine the other ingredients: flour, sugar, oats, baking soda, cinnamon, nutmeg, and cloves.
Combine your wet and dry mixtures. If you want chocolate chips, add them at the end.
Divide the batter between two loaf pans. (I went with one chocolate chip loaf and one without.)
Sprinkle some oats, cinnamon, and chocolate chips on top if you like.
That’s it! Look how gorgeous it is! SO easy, so delicious. Get excited.
Pumpkin Oatmeal Bread
Ingredients:
- 15 oz (1 can) canned pumpkin
- 4 eggs
- 2/3 c vegetable oil
- 1/3 c unsweetened applesauce
- 2/3 c water
- 2 1/3 c whole wheat flour
- 1 c rolled oats
- 1 2/3 cups sugar
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/8 tsp ground cloves
- 3/4 c chocolate chips
Steps:
- Preheat the oven to 350°F.
- Combine pumpkin, eggs, oil, applesauce and water in a bowl. Beat together until creamy.
- Sift the flour, baking soda, sugar, spices together. Stir in oatmeal.
- Add dry ingredients to wet ingredients until fully mixed. If you’re adding chocolate chips, do it now.
- Let the batter sit for 5 minutes. This allows the oatmeal to soak up some of the pumpkin flavor from the liquids.
- Split the batter between two greased loaf pans. Sprinkle the batter with oats, cinnamon, and chocolate chips.
- Bake for 50-60 minutes. It’s done when a toothpick stuck in the middle comes out clean. Leave in the pan to cool completely before digging in.
