Jump to RecipeY’all, I have discovered something AMAZING. Pineappleade is the perfect drink for this summer. It’s delicious, fruity but not overly sugary or acidic.
I can’t take credit for this recipe, unfortunately. It’s Mark Bittman of course; I heart his cookbooks so much. It’s in The Best Recipes in the World, which continues to be one of my favorite cookbooks I’ve ever owned.
I’m not usually one for juices: they tend to be too acidic for me, even when they’re not loaded with extra sugar. (Don’t get me wrong, I love sugar. I just prefer it in baked goods or ice cream instead of drinks.) Even fresh-squeeze orange juice is too much for me after a few sips. But not pineappleade. I could drink a whole pitcher of this stuff in one sitting.
Make a batch next time you’ve got friends coming over, and enjoy sitting on the porch sipping this gem. Or make it for a day at the lake or the beach as a kid-friendly beach beverage that’s not loaded with artificial sweeteners!
According to Bittman, this drink actually has Chinese origins. So next time you get takeout (or make your own), add this drink to finish off your meal!
It’s more work to use fresh pineapple, I know. You could skip the first step and use canned pineapple juice if you’re in a hurry and it would be fine. But
Same thing for limes. Plus, you don’t have to work so hard to squeeze the limes. Trust me, just do it.
If you want to make it boozy, the obvious choice is a white rum. Vodka also pairs nicely.
If making in advance or taking somewhere, follow the recipe through step four. Bring the sparkling water with you separately and give the pineapple mixture a good stir before and after adding the sparking water.

Ingredients
- 1 pineapple
- 1 1/2 cups water
- 1/2 cups fresh lime juice
- 2 tbsp simple syrup
- 2 cans sparkling water or club soda
Instructions
- Peel the pineapple and cut into chunks.
- If you have a juicer: Follow juicer instructions to juice the pineapple chunks.
- If you don’t have a juicer: Put the chunks and water into a blender and liquefy. Strain the pineapple through a sieve over a pitcher so you end up with just the liquid. Discard the pulp.
- Add the lime juice and simple syrup and stir to combine.
- Immediately before serving, add 2 cans of sparkling water and ice.

Why would you need simple syrup when the pineapple is so sweet?
I find that it balances the slight acidity of the pinapple and the pop of the sparkling water. But you’re right, it 100% depends on the sweetness of your pineapple! If it’s perfectly sweetened, skip it!
