I first made parmesan roasted butternut squash last Thanksgiving when I was trying to add another healthy side to the table. You know it’s a challenge to do that, especially to do one that people will actually eat when matched up against mashed potatoes and mac and cheese.
I threw a butternut squash into my grocery cart on a whim. Essentially, I threw leftover bits of things on them and tossed them on the table.
It takes a lot to compete with Thanksgiving sides!

Best of all, the hardest part of this recipe is peeling and slicing the butternut squash. Once you’ve done that – or bought it prepared – all it takes is tossing a few times and setting a few timers!
Start with just the basics: salt, pepper and olive oil.
As they roast, add herbs and cheese!
This recipe makes one large tray of parmesan roasted butternut squash. It keeps really well, so feel free to double it for leftovers later in the week!
Tools you’ll need: a peeler, knife, cutting board, and cookie sheet.
Parmesan Roasted Butternut Squash
Ingredients
- 1 medium butternut squash about 2 lbs
- 1/4 tsp sage
- 1/4 tsp thyme
- 2 Tbsp extra virgin olive oil
- 1/3 cup Parmesan cheese
Instructions
- Preheat the oven to 425°F. Line a large cookie sheet with a sheet of aluminum foil and spray with cooking spray.
- Toss the squash with olive oil, salt & pepper. Roast for 15 minutes.
- Toss the squash with sage and thyme and roast 10 more minutes.
- Grate cheese over the top and roast 5 minutes more, until squash is tender.
- Serve straight out of the oven!
Parmesan roasted butternut squash is easy enough to pull together on a weeknight, but good enough to make it onto a holiday table!
