These easy Thai noodles have quickly become one of my favorite pasta dishes! This is one of easiest side dishes I’ve ever thrown together, and can be effortlessly made into a whole meal.
It’s easy to make this side dish into a meal: just add chicken or another protein. I’ve even added edamame for a vegetarian dinner. I based it on this one, with some personalizations. This dish is traditionally served cold, but I love it hot and usually just pop the leftovers in the microwave!
Heat the oils and crushed red pepper, then strain out the pepper flakes. Whisk in soy sauce and honey.
Pour the sauce over cooked noodles and toss to coat.
Top with cilantro, green onions, peanuts, and sesame seeds. That’s it for a fantastic side dish!
You can make this with traditional noodles, like rice noodles or udon, and it’s a little tastier. However, one of the things I love about this dish is that I can pull it together with everything already in my pantry, and I always have angel hair. Your choice.
Easy Thai Noodles
Ingredients:
- 1/2 cup sesame oil
- 1/4 cup vegetable oil
- 1 1/2 tbsp crushed red pepper
- 1 box angel hair pasta or rice noodles
- 5 tbsp honey
- 7 tbsp soy sauce
- 3 green onions
- a few sprigs of cilantro
- 3 tbsp peanuts
- dash of sesame seeds
Steps:
- Cook the pasta as directed on the container. While the pasta cooks, combine the oils and red pepper in a small saucepan. Heat until just beginning to smoke.
- Remove from heat, and drain out the red pepper. Whisk in honey and soy sauce to the oil.
- Put the noodles in a large bowl and pour the sauce over the noodles, tossing well to coat.
- When serving, top with peanuts, cilantro, green onions and sesame seeds!
My husband and I have long been fans of Thai flavors (Thai noodle soup & curried sweet potato soup to name a few favorites), so the fact that we’re obsessed with this should be no surprise. But we loved these easy Thai noodles so much, I’ve already got a second batch of sauce made in the fridge for next time we need an easy side dish! When you try it, I’d love to hear if you like it.
