With Valentine’s Day right around the corner, I wanted to share my husband’s favorite dessert: chocolate chess pie.
This is Logan’s absolute favorite. His family always has it at Thanksgiving and Christmas, and once we went to his aunt’s house and she pulled out FOUR to give to him to get him through finals. (Bonus: they freeze well.)
They’re rich and decadent, full of chocolate and with that chess texture is just unbeatable. (Where does the term come from to describe that texture? I have no idea.) It’s perfect for a Valentine’s Day dessert!
It’s also a ridiculously simple recipe. This version comes from the Angus Barn, a really nice restaurant in Raleigh that we went to for graduation dinners. They may have served the best steak I’ve ever had. Once we went during the Christmas season, and they had young children dressed up as elves, handing out gingerbread cookies while you waited for your table. One was even perched inside the 20 foot Christmas tree, ready to pose for a photo with you! If you ever get the chance to go, don’t hesitate.
Only a few simple ingredients! (Butter and salt not pictured.)
First, melt the chocolate and butter together.
Then add the other ingredients.
Pour into an unbaked pie crust.
Bake for 35 minutes, and you get a beautiful pie!
ANGUS BARN CHOCOLATE CHESS PIE
INGREDIENTS:
- 1 pie crust
- 1 stick unsalted butter
- 2 squares (2 oz) semi-sweet bakers chocolate
- 1 cup sugar
- 2 eggs, beaten
- 1 tsp vanilla
- dash salt
STEPS:
- Preheat the oven to 350°F.
- Melt butter and chocolate together. To do it in the microwave, microwave in 20-second intervals, stirring each time between. If it’s nearly melted, just keep stirring until you have a smooth liquid.
- Let the chocolate mixture cool for a minute or two, then add the sugar.
- Combine the eggs, vanilla, and salt together, then add to the chocolate mixture.
- Pour into pie crust and bake 35 minutes.
- Best served with whipped cream or vanilla ice cream!
It’s good warm, but doesn’t need to be – we typically serve it room temperature. It keeps well and is freezer friendly too!
