This spinach dip is the perfect quick and healthy appetizer option for your next party, potluck or hosting gig!

Like everyone else, I started the new year full of resolve to eat healthier and take better care of myself. On the average day, that’s doable. But it seems like every single weekend there’s a
special occasion! Birthdays. Celebrating new jobs. Visiting grandma. Valentine’s Day. Bad Day Desserts. Parties.
AKA a million little reasons to eat tasty but not-so-healthy foods. And I am such a sucker for a special occasion.
So when we hosted a going-away party for two friends, I knew I needed at least one vaguely healthy snack option. Luckily, I came across a recipe for a quick spinach dip which has the smooth richness of a party food but not as bad for you as a mayo-based dip!
Based on this recipe, with a few tweaks.
Easy ingredients: check! (Not pictured: garlic salt. After initially putting it together I realized it was missing that garlic zing.)
Dump everything in a bowl together, and stir!
It tastes best when it gets to sit in the fridge for a couple hours before serving. The flavors get all mixed together and the results create this creamy, cheesy, slightly tart, dip. Plus it feels good to snack on something that’s got some healthiness to it.
QUICK SPINACH DIP
INGREDIENTS:
- 10 oz frozen chopped spinach, thawed & liquid squeezed out
- 1/2 cup light sour cream
- 2/3 cup Greek yogurt
- 1/3 cup Parmesan cheese
- 2 tbsp chopped onion flakes
- 1 tsp garlic salt
- salt & pepper
STEPS:
- Combine everything in a bowl and stir well.
- Chill, covered, in the fridge for 2+ hours before serving.
- Set out 20-30 minutes before serving.
