When you add pomegranates to champagne, they move in this mesmerizing slow float up and back down, slower than the bubbles. It looks like rubies are in your glass, giving it even more of a glammed up feel. Add a bit of pomegranate juice for tartness and St. Germain to sweeten it up, and you’ve got a fantastic sip for the night!
Like any good cocktail, you can play with the ratios to suit your tastes. I wanted a drink that’s a little sweet but not overwhelmingly so, something light. I measured the juice and St. Germain into my champagne glasses, then topped it with bubbly.
You can easily make this sweeter with more St. Germain or start with

Pomegranate Champagne Cocktail
Ingredients
- 7-10 pomegranate seeds
- 2 tsp pomegranate juice
- 1 1/2 tsp St. Germain
- 1/2 cup champagne
Instructions
- Combine the pomegranate seeds, pomegranate juice, and St. Germain.
- Fill with champagne and stir gently before serving in champagne flutes.
