Since it looks like most of us will spend our Easters in some form of quarantine/social distancing, I want the meal to be both celebratory and Not Hard To Make.
Since Easter will be a party of two over here, I’ve been cooking up our Easter favorites for the past few weeks. Pork tenderloin has been on the menu, and probably will make deviled eggs later this week!
That’s where lemon garlic green beans enter! Somehow they taste like spring: light and green with pops of brightness. It’s a great veggie alongside whatever your traditional Easter meal includes.
The two of us can put away a tray of these by ourselves, so plan to make plenty or serve it alongside other dishes.
The amounts listed here are meant for a weeknight meal to feed two people. For a holiday meal, I would double or triple it – the only limitation is the size of your oven! That being said, don’t crowd the pan too much – if too many veggies are overlapping, they won’t touch the bottom of the tray enough and can’t get that great caramelization that’s so perfect in roasted veggies.
It’s simple enough to be on your weeknight dinner rotation, which is perfect for a holiday meal that probably looks a little non-traditional this year.
These also keep pretty well, so leftovers are your friend here. You can also use them (warm or cold) to up your salad toppings game. To that end, these are great for meal prepping too – a big batch on Sunday will get you a healthy side all week long at lunch!
Tools you’ll need: cutting board, knife, baking tray.
Lemon Garlic Green Beans
Ingredients
- ½ lb green beans
- 4-5 cloves garlic
- 1 Tbsp olive oil
- salt & pepper
- ½ lemon about 1 Tbsp juice
Instructions
- Preheat the oven to 430°F (220°C). Trim the ends of the green beans and peel garlic.
- Spread the green beans and garlic on a baking sheet. Add olive oil, salt and pepper. Toss with your hands or tongs.
- Roast for 10 minutes. Toss everything, then roast another 8-10 minutes.
- When they're done, toss with the lemon juice and serve!
